The history of pistachio:

The pistachio The noblest nut of all is native to Iran. As far as history records trees have existed,but
so rare that they were enjoyed mostly by royality and the rich. It is said that Queen Belghais of Saba
used to serve her imperial guests with pistachio of Iran. Since 1920's pistachio gradually became a very
popular nut tree in Iran and farmers began to plant and develope the perfect tree.Since then it gained
the exporting dimensions and bulk that has been enhanced with the passage of time.

The pistachio trees bear their first fruit seven years after planting and the fruits split open at one side
without discharging the nut.They are then ready for arvesting. By this time the fruit is usually covered
with a smooth ,soft purple and creamy inside skin which should be peeled off. This fresh skin and the
bone(like shells as well) , have some industrial uasge like food stuff (jam) , phenyl and neopan boards.

There are almost ten different kinds of pistachios as: Jumbo,Round, Lony,etc... which ranges from 18-
20,20-22,22- 24,24-26.26-28 and 28-30 Pistachios per ounce in terms of bigness and smallness. Today in
Kerman province especially regions surrounding the city of Rafsanjan which is the center of pistachio
production,more than 80 percent of the whole production of the country's pistachios are produced.
The ideal climate of Rafsanjan area,with plenty of sunshine and perfect soil for
growing pistachio trees,gives the Iranian pistachio the most natural
taste and flavour that no other pistachios can match.This excellent
quality and the delicious taste of pistachio will make you unable to
stop eating once you have started.
